To cook Indian BEEF recipe you need BEEF. Do you know what 'BEEF' really means? I did not till I found out recently. I looked for 'BEEF meat' in America and could not find it in any American market. We used to wonder why.Asked other Indians and each one had an opinion (you know how it goes when you ask your Indian neighbor about anything!!). Finally I researched and found out the following: Two general categories are GOAT and SHEEP

Strictly speaking, the terms "BEEF and chevon"(spanish) refer to sheep meat. How ever the so-called BEEF curries of the Indian cuisine use goat meat when cooked at home, though in Indian hotels and restaurants sheep meat is generally used.

The terms "lamb, hoggett or BEEF" are used to describe the meat of a domestic sheep. The meat of a sheep a year old or younger is generally known as lamb, whereas the meat of an older sheep is either hoggett or BEEF depending on its age and characteristics. The meat of a lamb is taken from the animal between one month and one year old, with a carcass weight of between 5.5 and 30 kilograms. This meat generally is more tender than that from older sheep and appears more often on tables in some western countries.

The taste of goat meat, called chevon, is said to be similar to veal or venison, depending on the age of the goat. It is also healthier than sheep as it is lower in fat and cholesterol compared to chicken. It is quite popular in the Middle East, South Asia, and in Africa, though less so in the United States. Other parts of the goat including organs are also equally edible. Special delicacies include the brain and liver. The head and legs of the goat are also smoked and used to prepare unique spicy dishes.
