![]() To cook Indian mutton recipe you need mutton. Do you know what 'mutton' really means? I did not till I found out recently. I looked for 'mutton meat' in America and could not find it in any American market. We used to wonder why.Asked other Indians and each one had an opinion (you know how it goes when you ask your Indian neighbor about anything!!). Mutton in IndiaThe word 'Mutton' is used very loosly in India for lamb, sheep and goat meats. In south India my husband (from Madurai) says they knew only two kinds sold as mutton, 'vella aadu' and 'chemery aadu'. That didn't help me!
Mutton OverseasStrictly speaking, the terms "mutton and chevon"(spanish) refer to sheep meat. How ever the so-called mutton curries of the Indian cuisine use goat meat when cooked at home, though in Indian hotels and restaurants sheep meat is generally used.

GOAT:![]() The taste of goat meat, called chevon, is said to be similar to veal or venison, depending on the age of the goat. It is also healthier than sheep as it is lower in fat and cholesterol compared to chicken. It is quite popular in the Middle East, South Asia, and in Africa, though less so in the United States. Other parts of the goat including organs are also equally edible. Special delicacies include the brain and liver.
